Ingredients
  

Lamb Rack
  • 1 kg rack of lamb French trimmed
Herb Crust
  • 100 g fresh breadcrumbs
  • 2 tbsp fresh rosemary chopped
  • 2 tbsp fresh thyme chopped
  • 2 cloves garlic minced
  • 50 g Parmesan cheese grated
  • 2 tbsp Dijon mustard
  • 2 tbsp olive oil
Seasoning
  • 1 tsp salt
  • 1 tsp black pepper

Method
 

Prepare the Lamb
  1. Preheat the oven to 200°C (400°F). Season the rack of lamb with salt and pepper.
  2. Heat olive oil in a frying pan over high heat. Sear the lamb on all sides until browned, about 3-4 minutes.
Make the Herb Crust
  1. In a food processor, combine breadcrumbs, rosemary, thyme, garlic, and Parmesan cheese. Pulse until mixed.
  2. Add Dijon mustard and pulse again until the mixture is well combined.
Coat and Roast
  1. Spread the herb mixture over the top of the lamb rack, pressing it down firmly.
  2. Place the lamb in a roasting pan and roast in the preheated oven for 20-25 minutes, or until the internal temperature reaches 60°C (140°F) for medium-rare.
Rest and Serve
  1. Remove the lamb from the oven and let it rest for 10 minutes before slicing.
  2. Serve with your choice of sides and enjoy!

Notes
