Method
Prepare the Lamb
- Preheat the oven to 200°C (400°F). Season the rack of lamb with salt and pepper.
- Heat olive oil in a frying pan over high heat. Sear the lamb on all sides until browned, about 3-4 minutes.
Make the Herb Crust
- In a food processor, combine breadcrumbs, rosemary, thyme, garlic, and Parmesan cheese. Pulse until mixed.
- Add Dijon mustard and pulse again until the mixture is well combined.
Coat and Roast
- Spread the herb mixture over the top of the lamb rack, pressing it down firmly.
- Place the lamb in a roasting pan and roast in the preheated oven for 20-25 minutes, or until the internal temperature reaches 60°C (140°F) for medium-rare.
Rest and Serve
- Remove the lamb from the oven and let it rest for 10 minutes before slicing.
- Serve with your choice of sides and enjoy!
