Method
Prepare the Lamb
- Preheat the oven to 200°C (400°F).
- Season the lamb rack with salt and pepper on all sides.
- In a bowl, mix the parsley, rosemary, thyme, garlic, breadcrumbs, Dijon mustard, and olive oil to form a paste.
Crust the Lamb
- Spread the herb mixture evenly over the meat side of the lamb rack.
- Place the lamb rack in a roasting pan, bone side down.
Roast the Lamb
- Roast in the preheated oven for about 25 minutes, or until the internal temperature reaches 60°C (140°F) for medium-rare.
- Remove from the oven and let it rest for 10 minutes before slicing.
Serve
- Slice the lamb rack between the bones and serve with your choice of sides.
