Ingredients
  

Lamb Rack
  • 1 rack lamb rack about 8 ribs
Herb Crust
  • 1 cup fresh parsley chopped
  • 1/2 cup fresh rosemary chopped
  • 1/2 cup fresh thyme chopped
  • 4 cloves garlic minced
  • 1/2 cup breadcrumbs preferably fresh
  • 1/4 cup Dijon mustard
  • 2 tablespoons olive oil

Method
 

Prepare the Lamb
  1. Preheat the oven to 200°C (400°F).
  2. Season the lamb rack with salt and pepper on all sides.
  3. In a bowl, mix the parsley, rosemary, thyme, garlic, breadcrumbs, Dijon mustard, and olive oil to form a paste.
Crust the Lamb
  1. Spread the herb mixture evenly over the meat side of the lamb rack.
  2. Place the lamb rack in a roasting pan, bone side down.
Roast the Lamb
  1. Roast in the preheated oven for about 25 minutes, or until the internal temperature reaches 60°C (140°F) for medium-rare.
  2. Remove from the oven and let it rest for 10 minutes before slicing.
Serve
  1. Slice the lamb rack between the bones and serve with your choice of sides.
