Ingredients
  

Lamb Rack
  • 1 rack lamb rack about 8 ribs
Herb Crust
  • 2 cups fresh parsley finely chopped
  • 1 cup fresh mint finely chopped
  • 1 cup fresh rosemary finely chopped
  • 4 cloves garlic minced
  • 1 cup breadcrumbs preferably fresh
  • 3 tablespoons Dijon mustard
  • 2 tablespoons olive oil

Method
 

Prepare the Lamb
  1. Preheat the oven to 400°F (200°C).
  2. Season the lamb rack with salt and pepper on all sides.
Make the Herb Crust
  1. In a food processor, combine parsley, mint, rosemary, garlic, and breadcrumbs. Pulse until finely chopped.
  2. Add Dijon mustard and olive oil, and pulse until mixed well.
Coat the Lamb
  1. Spread the herb mixture evenly over the meat side of the lamb rack, pressing it down firmly.
Roast the Lamb
  1. Place the lamb rack in a roasting pan and roast in the preheated oven for about 25 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.
  2. Remove from the oven and let it rest for 10 minutes before slicing.
Serve
  1. Slice the lamb rack between the bones and serve with your choice of sides.

Notes

For a more intense flavor, marinate the lamb in garlic and herbs for a few hours before cooking.
