Method
Prepare the Lamb
- Preheat the oven to 400°F (200°C).
- Season the lamb rack with salt and pepper on all sides.
Make the Herb Crust
- In a food processor, combine parsley, mint, rosemary, garlic, and breadcrumbs. Pulse until finely chopped.
- Add Dijon mustard and olive oil, and pulse until mixed well.
Coat the Lamb
- Spread the herb mixture evenly over the meat side of the lamb rack, pressing it down firmly.
Roast the Lamb
- Place the lamb rack in a roasting pan and roast in the preheated oven for about 25 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.
- Remove from the oven and let it rest for 10 minutes before slicing.
Serve
- Slice the lamb rack between the bones and serve with your choice of sides.
