Ingredients
  

Wet Ingredients
  • 3 medium ripe bananas mashed
  • 1 cup brown sugar packed
  • 1 large egg beaten
  • 1 3/4 cup vegetable oil
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 1/2 teaspoon ground nutmeg
  • 1 1/4 teaspoon salt
  • 1 1/2 cup chopped walnuts or pecans (optional)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a loaf pan with cooking spray or butter.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the brown sugar, beaten egg, vegetable oil, and vanilla extract to the mashed bananas. Mix well until combined.
Mixing Dry Ingredients
  1. In another bowl, whisk together the flour, baking soda, cinnamon, ginger, nutmeg, and salt.
  2. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
  3. If using, fold in the chopped nuts.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
