Preparation
- Preheat the oven to 350°F (175°C). Grease a loaf pan with cooking spray or butter.
- In a mixing bowl, mash the ripe bananas until smooth.
- Add the brown sugar, beaten egg, vegetable oil, and vanilla extract to the mashed bananas. Mix well until combined.
Mixing Dry Ingredients
- In another bowl, whisk together the flour, baking soda, cinnamon, ginger, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
- If using, fold in the chopped nuts.
Baking
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
