English Muffin Breakfast Pizzas

Delicious and easy breakfast pizzas made with toasted English muffins, topped with eggs, cheese, and your favorite breakfast toppings.

Ingredients
  

Base
  • 4 pieces English Muffins Split in half
Toppings
  • 4 large Eggs Beaten
  • 1 cup Shredded Cheddar Cheese Or cheese of choice
  • 1 cup Cooked Bacon Chopped
  • 1 cup Cherry Tomatoes Halved
  • 1 tablespoon Olive Oil For drizzling
  • 1 teaspoon Salt To taste
  • 1 teaspoon Black Pepper To taste

Method
 

Prepare the Muffins
  1. Preheat the oven to 375°F (190°C).
  2. Toast the English muffin halves until lightly golden.
Prepare the Topping Mixture
  1. In a mixing bowl, beat the eggs and season with salt and pepper.
  2. Add the chopped bacon and halved cherry tomatoes to the egg mixture.
Assemble the Pizzas
  1. Place the toasted muffin halves on a baking sheet.
  2. Spoon the egg mixture evenly onto each muffin half.
  3. Sprinkle shredded cheese over the top of each muffin.
Bake
  1. Drizzle olive oil over the assembled muffins.
  2. Bake in the preheated oven for 12-15 minutes, or until the eggs are set and the cheese is melted.
Serve
  1. Remove from the oven and let cool for a few minutes before serving.
