Ingredients
  

Chicken and Vegetables
  • 2 cups Cooked chicken, shredded Rotisserie chicken works well
  • 1 cup Frozen mixed vegetables Carrots, peas, and corn
  • 1 can Cream of chicken soup 10.5 oz can
  • 1 cup Chicken broth Low sodium recommended
Biscuit Topping
  • 1 cup All-purpose flour
  • 1 tbsp Baking powder
  • 1 tsp Salt
  • 1 cup Milk Whole or 2% milk
  • 1 tbsp Butter, melted

Method
 

Prepare the Chicken Mixture
  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded chicken, frozen mixed vegetables, cream of chicken soup, and chicken broth. Mix until well combined.
  3. Pour the chicken mixture into a greased 9x13 inch baking dish.
Make the Biscuit Topping
  1. In a separate bowl, whisk together the flour, baking powder, and salt.
  2. Stir in the milk and melted butter until just combined. Do not overmix.
  3. Drop spoonfuls of the biscuit batter over the chicken mixture, spreading it out evenly.
Bake the Casserole
  1. Bake in the preheated oven for 25-30 minutes, or until the biscuit topping is golden brown and cooked through.
  2. Let cool for a few minutes before serving.
