Method
Prepare the Chicken Mixture
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the shredded chicken, frozen mixed vegetables, cream of chicken soup, and chicken broth. Mix until well combined.
- Pour the chicken mixture into a greased 9x13 inch baking dish.
Make the Biscuit Topping
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Stir in the milk and melted butter until just combined. Do not overmix.
- Drop spoonfuls of the biscuit batter over the chicken mixture, spreading it out evenly.
Bake the Casserole
- Bake in the preheated oven for 25-30 minutes, or until the biscuit topping is golden brown and cooked through.
- Let cool for a few minutes before serving.
