Ingredients
  

Chicken and Vegetables
  • 2 cups Cooked Chicken, shredded Rotisserie chicken works well.
  • 1 cup Frozen Mixed Vegetables Carrots, peas, and corn.
  • 1 can Cream of Chicken Soup 10.5 oz can.
  • 1 cup Chicken Broth Low sodium preferred.
Biscuit Topping
  • 1 cup All-Purpose Flour
  • 1 tbsp Baking Powder
  • 1 tsp Salt
  • 1 cup Milk Whole milk or buttermilk.
  • 1 tbsp Butter, melted

Method
 

Prepare the Chicken Mixture
  1. Preheat the oven to 375°F (190°C). In a mixing bowl, combine the shredded chicken, frozen mixed vegetables, cream of chicken soup, and chicken broth. Mix well.
Assemble the Casserole
  1. Pour the chicken mixture into a greased casserole dish, spreading it evenly.
Make the Biscuit Topping
  1. In a separate bowl, whisk together the flour, baking powder, and salt. Stir in the milk and melted butter until just combined.
Top and Bake
  1. Spoon the biscuit batter over the chicken mixture in the casserole dish. Bake in the preheated oven for 25-30 minutes, or until the biscuit topping is golden brown.
Serve
