Ingredients
  

Chicken and Vegetables
  • 2 cups Cooked Chicken, shredded Rotisserie chicken works well.
  • 1 cup Frozen Mixed Vegetables Carrots, peas, and corn.
  • 1 can Cream of Chicken Soup 10.5 oz can.
  • 1 cup Chicken Broth Low sodium preferred.
Biscuit Topping
  • 1 cup All-Purpose Flour
  • 1 tbsp Baking Powder
  • 1 tsp Salt
  • 1 cup Milk Whole milk recommended.
  • 1 tbsp Butter, melted For added flavor.

Method
 

Prepare the Filling
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, combine the shredded chicken, frozen mixed vegetables, cream of chicken soup, and chicken broth. Stir until well mixed and heated through.
  3. Transfer the chicken mixture to a greased casserole dish.
Make the Biscuit Topping
  1. In a mixing bowl, whisk together the flour, baking powder, and salt.
  2. Add the milk and melted butter to the dry ingredients and stir until just combined.
  3. Spoon the biscuit batter over the chicken mixture in the casserole dish.
Bake the Casserole
  1. Bake in the preheated oven for 25-30 minutes, or until the biscuit topping is golden brown and cooked through.
  2. Let cool for a few minutes before serving.
