Ingredients
  

For the Flatbread
  • 4 pieces Flatbread Store-bought or homemade
  • 2 cups Cooked Chicken Breast Sliced or shredded
  • 1 cup Fresh Mozzarella Sliced
  • 1 cup Cherry Tomatoes Halved
  • 1 cup Fresh Basil Leaves Torn
  • 2 tablespoons Olive Oil For drizzling
  • 1 teaspoon Balsamic Glaze For drizzling
  • 1 teaspoon Salt To taste
  • 1 teaspoon Black Pepper To taste

Method
 

Prepare the Chicken
  1. Preheat the grill or grill pan over medium-high heat. Season the chicken breast with salt and pepper.
  2. Grill the chicken for 6-7 minutes on each side or until fully cooked. Remove from heat and let it rest before slicing.
Assemble the Flatbreads
  1. Preheat the oven to 400°F (200°C). Place the flatbreads on a baking sheet.
  2. Layer the grilled chicken, mozzarella slices, and halved cherry tomatoes evenly over each flatbread.
  3. Drizzle with olive oil and season with additional salt and pepper if desired.
Bake and Serve
  1. Bake in the preheated oven for 10-12 minutes or until the cheese is melted and bubbly.
  2. Remove from the oven and top with fresh basil leaves and a drizzle of balsamic glaze before serving.
