Method
Prepare the Chicken
- Preheat the grill or grill pan over medium-high heat. Season the chicken breast with salt and pepper.
- Grill the chicken for 6-7 minutes on each side or until fully cooked. Remove from heat and let it rest before slicing.
Assemble the Flatbreads
- Preheat the oven to 400°F (200°C). Place the flatbreads on a baking sheet.
- Layer the grilled chicken, mozzarella slices, and halved cherry tomatoes evenly over each flatbread.
- Drizzle with olive oil and season with additional salt and pepper if desired.
Bake and Serve
- Bake in the preheated oven for 10-12 minutes or until the cheese is melted and bubbly.
- Remove from the oven and top with fresh basil leaves and a drizzle of balsamic glaze before serving.
