Prepare the Chicken
- Preheat the grill or grill pan over medium heat. Drizzle olive oil on the chicken breast and season with salt and pepper.
- Grill the chicken for about 6-7 minutes on each side or until fully cooked. Remove from heat and let it rest before slicing.
Assemble the Flatbreads
- Preheat the oven to 400°F (200°C). Place the flatbreads on a baking sheet.
- Layer each flatbread with sliced chicken, fresh mozzarella, and halved cherry tomatoes.
- Bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.
Finish and Serve
- Remove the flatbreads from the oven and top with fresh basil leaves.
- Drizzle with balsamic glaze before slicing and serving.
