Ingredients
  

Vegetables
  • 2 medium cucumbers sliced
  • 1 pint cherry tomatoes halved
Cheese
  • 8 ounces fresh mozzarella cubed
Herbs
  • 1 tablespoon fresh basil chopped
Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper freshly ground

Method
 

Prepare the Ingredients
  1. Slice the cucumbers and halve the cherry tomatoes.
  2. Cube the fresh mozzarella.
  3. Chop the fresh basil.
Mix the Salad
  1. In a mixing bowl, combine the cucumbers, cherry tomatoes, mozzarella, and basil.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
Serve
