Method
Prepare the Chicken
- Heat olive oil in a sauté pan over medium heat. Sear the chicken breasts for 2-3 minutes on each side until golden brown.
Sauté the Onions
- In the same pan, add the sliced onions and cook for about 10 minutes until they are caramelized and soft.
Combine in Crockpot
- Place the seared chicken breasts in the crockpot. Top with the caramelized onions, thyme, garlic powder, salt, and pepper.
- Pour the beef and chicken broth over the chicken and onions.
Cook
- Cover and cook on low for 6 hours or until the chicken is cooked through and tender.
Add Cheese
- In the last 30 minutes of cooking, sprinkle the shredded Swiss cheese over the chicken and cover to allow the cheese to melt.
Serve
- Once done, serve the chicken with the onion broth over rice or with crusty bread.
