Crockpot French Onion Chicken

Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Onion
  • 2 medium yellow onions sliced
Broth
  • 1 cup beef broth
  • 1 cup chicken broth
Seasoning
  • 1 teaspoon thyme dried
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon salt to taste
Cheese
  • 1 cup Swiss cheese shredded
Oil
  • 2 tablespoons olive oil for sautéing

Method
 

Prepare the Chicken
  1. Heat olive oil in a sauté pan over medium heat. Sear the chicken breasts for 2-3 minutes on each side until golden brown.
Sauté the Onions
  1. In the same pan, add the sliced onions and cook for about 10 minutes until they are caramelized and soft.
Combine in Crockpot
  1. Place the seared chicken breasts in the crockpot. Top with the caramelized onions, thyme, garlic powder, salt, and pepper.
  2. Pour the beef and chicken broth over the chicken and onions.
Cook
  1. Cover and cook on low for 6 hours or until the chicken is cooked through and tender.
Add Cheese
  1. In the last 30 minutes of cooking, sprinkle the shredded Swiss cheese over the chicken and cover to allow the cheese to melt.
Serve
  1. Once done, serve the chicken with the onion broth over rice or with crusty bread.

Notes
