Ingredients
  

Main Ingredients
  • 1 lb Ground beef Lean
  • 1 can Black beans Drained and rinsed
  • 1 can Corn Drained
  • 1 can Diced tomatoes With green chilies
  • 1 cup Frozen tater tots
  • 1 cup Shredded cheddar cheese For topping
  • 1 packet Taco seasoning
Optional Garnishes
  • 1 cup Sour cream For serving
  • 0.5 cup Chopped green onions For garnish

Method
 

Preparation
  1. In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add taco seasoning to the beef and mix well. Remove from heat.
Crock Pot Assembly
  1. In the crock pot, layer the black beans, corn, and diced tomatoes.
  2. Add the seasoned ground beef on top of the layers.
  3. Top with frozen tater tots evenly.
Cooking
  1. Cover the crock pot and cook on low for 4 hours.
  2. In the last 30 minutes of cooking, sprinkle shredded cheddar cheese on top and cover until melted.
Serving
  1. Serve hot, garnished with sour cream and chopped green onions if desired.

Notes

This casserole can be prepared ahead of time and stored in the refrigerator before cooking. Adjust cooking time if using a larger crock pot.
