Preparation
- In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add taco seasoning to the beef and mix well. Remove from heat.
Crock Pot Assembly
- In the crock pot, layer the black beans, corn, and diced tomatoes.
- Add the seasoned ground beef on top of the layers.
- Top with frozen tater tots evenly.
Cooking
- Cover the crock pot and cook on low for 4 hours.
- In the last 30 minutes of cooking, sprinkle shredded cheddar cheese on top and cover until melted.
Serving
- Serve hot, garnished with sour cream and chopped green onions if desired.
