Preparation
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- Add the chopped onion and bell pepper to the skillet and cook until softened, about 5 minutes.
Crock Pot Cooking
- Transfer the cooked beef and vegetables to the crock pot.
- Add the black beans, kidney beans, corn, diced tomatoes, taco seasoning, and beef broth. Stir to combine.
- Cover and cook on low for 4 hours or high for 2 hours.
Serving
- Once cooked, sprinkle shredded cheddar cheese on top and let it melt for a few minutes.
- Serve hot with a dollop of sour cream on top.
