Ingredients
  

Meat and Beans
  • 1 lb ground beef or ground turkey
  • 1 can black beans drained and rinsed
  • 1 can kidney beans drained and rinsed
Vegetables
  • 1 can corn drained
  • 1 cup chopped onion
  • 1 cup chopped bell pepper
Sauces and Seasonings
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup beef broth
Toppings
  • 1 cup shredded cheddar cheese for topping
  • 1 cup sour cream for serving

Method
 

Preparation
  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Add the chopped onion and bell pepper to the skillet and cook until softened, about 5 minutes.
Crock Pot Cooking
  1. Transfer the cooked beef and vegetables to the crock pot.
  2. Add the black beans, kidney beans, corn, diced tomatoes, taco seasoning, and beef broth. Stir to combine.
  3. Cover and cook on low for 4 hours or high for 2 hours.
Serving
  1. Once cooked, sprinkle shredded cheddar cheese on top and let it melt for a few minutes.
  2. Serve hot with a dollop of sour cream on top.
