Prepare the Potatoes
- Preheat the oven to 425°F (220°C).
- Peel the potatoes and cut them into fries, about 1/4 inch thick.
- Soak the cut fries in cold water for at least 30 minutes to remove excess starch.
Season and Bake
- Drain and pat the fries dry with a towel.
- In a mixing bowl, toss the fries with olive oil, minced garlic, salt, and pepper.
- Spread the fries in a single layer on a baking sheet.
- Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
Finish and Serve
- Remove the fries from the oven and immediately sprinkle with grated Parmesan cheese.
- Garnish with chopped parsley and serve hot.
