Ingredients
  

Pasta
  • 12 oz Fettuccine or pasta of choice
Chicken
  • 2 cups Cooked chicken breast shredded or diced
Sauce
  • 1 cup Ricotta cheese whole milk or part-skim
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese grated
  • 2 cloves Garlic minced
  • 1 tsp Dried oregano
  • 1 tsp Salt to taste
  • 0.5 tsp Black pepper to taste
Garnish
  • 0.25 cup Fresh basil chopped
  • 0.25 cup Parmesan cheese for serving

Method
 

Cook the Pasta
  1. In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.
Prepare the Sauce
  1. In a skillet over medium heat, add the minced garlic and sauté for 1-2 minutes until fragrant.
  2. Add the ricotta cheese, heavy cream, and Parmesan cheese to the skillet. Stir until well combined and heated through.
  3. Stir in the cooked chicken, oregano, salt, and pepper. Cook for an additional 3-5 minutes until the chicken is heated.
Combine and Serve
  1. Add the cooked pasta to the skillet and toss to coat in the creamy sauce.
  2. Serve immediately, garnished with fresh basil and additional Parmesan cheese.

Notes

For a lighter version, you can substitute half of the heavy cream with chicken broth.
