  • 2 cups Sweet Corn Fresh or frozen
  • 8 oz Cream Cheese Softened
  • 1 cup Sour Cream
  • 1 cup Shredded Cheddar Cheese Plus extra for topping
  • 1 large Egg Beaten
  • 1 tbsp Sugar
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 cup Cornmeal

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the softened cream cheese, sour cream, and beaten egg. Whisk until smooth.
  3. Add the sweet corn, shredded cheddar cheese, sugar, salt, black pepper, and cornmeal to the mixture. Stir until well combined.
  4. Pour the mixture into a greased 9x9 inch baking dish.
  5. Sprinkle additional shredded cheddar cheese on top if desired.
  6. Bake in the preheated oven for 45 minutes or until the top is golden and the casserole is set.
