Ingredients
  

Eggs
  • 6 large eggs hard-boiled
Filling
  • 1 cup crawfish tails cooked and chopped
  • 3 tablespoons mayonnaise adjust to taste
  • 1 tablespoon Dijon mustard
  • 1 teaspoon hot sauce optional
  • 1 teaspoon lemon juice
  • 2 tablespoons green onions chopped
  • 1 teaspoon paprika for garnish
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste

Method
 

Prepare the Eggs
  1. Hard boil the eggs by placing them in a pot of water, bringing it to a boil, then covering and letting sit for 10 minutes. Cool in ice water.
Make the Filling
  1. Peel the cooled eggs and slice them in half lengthwise. Remove the yolks and place them in a mixing bowl.
  2. Add the crawfish tails, mayonnaise, Dijon mustard, hot sauce, lemon juice, green onions, salt, and pepper to the yolks. Mash together until smooth.
Assemble the Deviled Eggs
  1. Spoon or pipe the crawfish mixture back into the egg whites.
  2. Sprinkle with paprika for garnish and serve on a platter.
