Ingredients
  

Base
  • 2 cups cottage cheese preferably low-fat
  • 1 cup chopped spinach fresh or frozen
  • 1 cup chopped bell peppers any color
  • 1 cup sliced mushrooms fresh
Toppings
  • 1 cup shredded mozzarella cheese or cheese of choice
  • 1 cup pizza sauce store-bought or homemade
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon red pepper flakes optional for heat

Method
 

Prepare the Base
  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the cottage cheese, chopped spinach, bell peppers, and mushrooms.
  3. Mix well until all ingredients are evenly incorporated.
Assemble the Bowl
  1. Spread the cottage cheese mixture evenly in a baking dish.
  2. Pour the pizza sauce over the top, spreading it evenly.
  3. Sprinkle the shredded mozzarella cheese on top, followed by the oregano, basil, and red pepper flakes.
Bake
  1. Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden.
  2. Remove from the oven and let cool for a few minutes before serving.
