Ingredients
  

Truffle Base
  • 1 cup cookie butter smooth variety
  • 1 cup cream cheese softened
  • 1 2 cups powdered sugar sifted
  • 1 teaspoon vanilla extract
Coating
  • 1 cup chocolate chips semi-sweet or dark
  • 1 tablespoon coconut oil for melting
  • 1 1/4 cup crushed cookies for garnish

Method
 

Prepare the Truffle Mixture
  1. In a mixing bowl, combine cookie butter and softened cream cheese until smooth.
  2. Gradually add sifted powdered sugar and vanilla extract, mixing until fully incorporated.
  3. Chill the mixture in the refrigerator for about 15 minutes to firm up.
Form the Truffles
  1. Once chilled, scoop out small portions of the mixture and roll them into balls, about 1 inch in diameter.
  2. Place the truffles on a cookie sheet lined with parchment paper.
Coat the Truffles
  1. In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
  2. Dip each truffle into the melted chocolate, ensuring it is fully coated, then return to the cookie sheet.
  3. Sprinkle crushed cookies on top of each truffle before the chocolate sets.
Chill and Serve
  1. Refrigerate the coated truffles for at least 30 minutes until the chocolate is firm.
  2. Serve chilled and enjoy your delicious cookie butter truffles!
