  • 2 cups coconut milk canned or carton
  • 1 tablespoon chia seeds optional for added texture
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup or honey for sweetness
Toppings
  • 1 cup shredded coconut unsweetened
  • 1 banana sliced for garnish
  • 1 cup whipped cream optional
  • 2 tablespoons toasted coconut flakes for garnish

Method
 

Prepare the Oats
  1. In a mixing bowl, combine rolled oats, coconut milk, chia seeds, vanilla extract, and maple syrup. Stir well to combine.
  2. Divide the mixture evenly into four jars or containers with lids.
Refrigerate
  1. Seal the jars and refrigerate overnight (or at least 4 hours) to allow the oats to absorb the liquid.
Serve
  1. Before serving, top each jar with shredded coconut, sliced banana, whipped cream, and toasted coconut flakes as desired.
