Prepare the Cookie Dough
- Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add the vanilla extract and mix well. Gradually add the flour and salt, mixing until just combined. Stir in the chopped nuts if using.
Shape and Bake
- Using a cookie scoop, form the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, or until the edges are lightly golden. Remove from the oven and let cool for a few minutes.
Coat with Cinnamon Sugar
- In a small bowl, combine the granulated sugar and ground cinnamon. Roll each warm cookie in the cinnamon sugar mixture until fully coated.
- Allow the cookies to cool completely on a wire rack before serving.
