Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 0.5 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 0.25 teaspoon salt
  • 0.5 cup chopped nuts optional
Cinnamon Sugar Coating
  • 0.25 cup granulated sugar
  • 1 tablespoon ground cinnamon

Method
 

Prepare the Cookie Dough
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  2. Add the vanilla extract and mix well. Gradually add the flour and salt, mixing until just combined. Stir in the chopped nuts if using.
Shape and Bake
  1. Using a cookie scoop, form the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
  2. Bake for 12-15 minutes, or until the edges are lightly golden. Remove from the oven and let cool for a few minutes.
Coat with Cinnamon Sugar
  1. In a small bowl, combine the granulated sugar and ground cinnamon. Roll each warm cookie in the cinnamon sugar mixture until fully coated.
  2. Allow the cookies to cool completely on a wire rack before serving.
