Ingredients
  

Pasta
  • 8 oz pasta (fusilli or penne) cooked according to package instructions
Vegetables
  • 2 cups cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup fresh basil chopped
Cheese
  • 1 cup mozzarella balls halved
Dressing
  • 1 3 olive oil extra virgin
  • 2 tbsp balsamic vinegar
  • 1 clove garlic minced
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste

Method
 

Prepare the Pasta
  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
Mix the Salad
  1. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, basil, and mozzarella balls.
Make the Dressing
  1. In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper.
Combine
  1. Pour the dressing over the pasta salad and toss gently to combine. Adjust seasoning if necessary.
Serve
  1. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
