Ingredients
  

Pasta
  • 8 oz fusilli pasta or any pasta of choice
Vegetables
  • 2 cups cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup red onion finely chopped
  • 1 cup fresh basil chopped
Dressing
  • 1 3/4 cup balsamic vinegar
  • 1 1/2 cup olive oil
  • 1 teaspoon garlic minced
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Prepare the Pasta
  1. Cook the fusilli pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
Mix the Salad
  1. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, and basil.
Make the Dressing
  1. In a separate bowl, whisk together the balsamic vinegar, olive oil, minced garlic, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the pasta salad and toss gently to combine. Adjust seasoning if necessary. Serve chilled or at room temperature.
