Ingredients
  

Potatoes
  • 4 medium Russet potatoes washed and scrubbed
Taco Filling
  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning
  • 1 cup water
Cheese and Toppings
  • 2 cups shredded cheddar cheese or Mexican blend
  • 1 cup sour cream for serving
  • 1 cup chopped lettuce for serving
  • 1 medium tomato diced, for serving
  • 1 medium jalapeño sliced, for serving

Method
 

Prepare Potatoes
  1. Preheat the oven to 400°F (200°C). Pierce each potato several times with a fork and place them on a baking sheet. Bake for 45 minutes or until tender.
Cook Taco Filling
  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Add taco seasoning and water to the skillet. Stir to combine and simmer for 5 minutes until thickened.
Assemble and Serve
  1. Once the potatoes are cooked, remove them from the oven and let cool slightly. Cut a slit down the center of each potato.
  2. Spoon the taco filling into each potato, top with shredded cheese, and return to the oven for 5 minutes or until cheese is melted.
  3. Serve topped with sour cream, lettuce, diced tomato, and jalapeño slices.
