Method
Prepare the Potatoes
- Preheat the oven to 400°F (200°C). Pierce the potatoes with a fork and place them on a baking sheet. Bake for 45 minutes or until tender.
Cook the Taco Filling
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- Add taco seasoning and water to the skillet. Stir and let simmer for 5 minutes until thickened.
Assemble the Dish
- Once the potatoes are cooked, remove them from the oven and let cool slightly. Cut them in half lengthwise and scoop out some of the insides to create a small well.
- Fill each potato half with the taco filling, then top with shredded cheese.
- Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Serve
- Top with sour cream, lettuce, diced tomatoes, and black olives. Serve warm.
