Ingredients
  

Potatoes
  • 4 medium Russet potatoes washed and scrubbed
Taco Filling
  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning or homemade seasoning
  • 1 cup water
Cheese and Toppings
  • 2 cups shredded cheddar cheese or Mexican blend
  • 1 cup sour cream for serving
  • 1 cup chopped lettuce for topping
  • 1 medium tomato diced for topping
  • 1 cup sliced black olives for topping

Method
 

Prepare the Potatoes
  1. Preheat the oven to 400°F (200°C). Pierce the potatoes with a fork and place them on a baking sheet. Bake for 45 minutes or until tender.
Cook the Taco Filling
  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Add taco seasoning and water to the skillet. Stir and let simmer for 5 minutes until thickened.
Assemble the Dish
  1. Once the potatoes are cooked, remove them from the oven and let cool slightly. Cut them in half lengthwise and scoop out some of the insides to create a small well.
  2. Fill each potato half with the taco filling, then top with shredded cheese.
  3. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Serve
  1. Top with sour cream, lettuce, diced tomatoes, and black olives. Serve warm.
