Ingredients
  

Sausage and Vegetables
  • 1 lb Italian sausage casings removed
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 medium potatoes peeled and diced
  • 4 cups chicken broth
  • 1 cup carrots diced
  • 1 cup celery diced
Cream and Cheese
  • 1 cup heavy cream
  • 2 cups cheddar cheese shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Cooking the Soup
  1. In a large pot over medium heat, add the Italian sausage and cook until browned, breaking it apart with a spoon.
  2. Add the diced onion, garlic, carrots, and celery to the pot. Sauté for about 5 minutes until the vegetables are softened.
  3. Stir in the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the potatoes are tender.
  4. Stir in the heavy cream, shredded cheddar cheese, thyme, salt, and pepper. Cook until the cheese is melted and the soup is heated through.
  5. Serve hot, garnished with additional cheese if desired.

Notes

For a spicier version, use spicy Italian sausage. You can also add other vegetables like corn or peas for extra flavor.
