Soup Base
  • 1 lb Italian sausage casings removed
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 4 medium potatoes peeled and diced
  • 1 cup carrots diced
  • 1 cup celery diced
Creamy Mixture
  • 1 cup heavy cream
  • 2 cups cheddar cheese shredded
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon dried thyme

Method
 

Prepare the Soup Base
  1. In a large pot, cook the Italian sausage over medium heat until browned, breaking it apart with a spoon.
  2. Add the diced onion, garlic, carrots, and celery to the pot and sauté until the vegetables are softened, about 5 minutes.
  3. Pour in the chicken broth and add the diced potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
Finish the Soup
  1. Stir in the heavy cream, shredded cheddar cheese, salt, pepper, and thyme. Cook until the cheese is melted and the soup is heated through, about 5 minutes.
  2. Taste and adjust seasoning if necessary. Serve hot.
