  • 2 cups grated carrots freshly grated
  • 1 cup raisins preferably golden raisins
  • 1 cup pineapple chunks fresh or canned, drained
  • 1 cup mini marshmallows optional
Dressing Ingredients
  • 1 cup plain yogurt or sour cream
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon lemon juice freshly squeezed

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the grated carrots, raisins, pineapple chunks, and mini marshmallows (if using).
  2. In a separate bowl, mix together the yogurt, honey, and lemon juice until smooth.
  3. Pour the dressing over the salad mixture and toss until everything is well coated.
  4. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
