  • 2 cups grated carrots
  • 1 cup raisins
  • 1 cup crushed pineapple drained
  • 1 cup mini marshmallows optional
  • 1 cup chopped walnuts optional
Dressing
  • 1 cup mayonnaise
  • 2 tablespoons honey or to taste
  • 1 tablespoon lemon juice freshly squeezed

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the grated carrots, raisins, crushed pineapple, mini marshmallows, and chopped walnuts if using.
Make the Dressing
  1. In a separate bowl, mix together the mayonnaise, honey, and lemon juice until smooth.
Combine and Serve
  1. Pour the dressing over the salad mixture and stir until well combined. Chill in the refrigerator for at least 30 minutes before serving.
