  • 1 cup raisins seedless
  • 1 cup pineapple chunks fresh or canned
  • 1 cup Greek yogurt or mayonnaise
  • 2 tablespoons honey optional, for sweetness
  • 1 tablespoon lemon juice freshly squeezed

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the grated carrots, raisins, and pineapple chunks.
  2. In a separate bowl, mix together the Greek yogurt, honey, and lemon juice until smooth.
  3. Pour the yogurt mixture over the carrot mixture and stir until well combined.
  4. Chill in the refrigerator for at least 30 minutes before serving.
  5. Serve in a serving dish and enjoy!
