Method
Prepare the Dough
- In a mixing bowl, combine warm milk and yeast. Let it sit for 5 minutes until frothy.
- Add melted butter, sugar, egg, and vanilla extract to the yeast mixture. Whisk until combined.
- Gradually add flour and mix until a dough forms. Knead for about 5 minutes until smooth.
- Cover the bowl with a damp cloth and let it rise in a warm place for 1 hour or until doubled in size.
Prepare the Filling
- In a separate bowl, mix grated carrots, brown sugar, cinnamon, nutmeg, and walnuts (if using).
Assemble the Rolls
- Preheat the oven to 350°F (175°C).
- Roll out the dough on a floured surface into a rectangle about 1/4 inch thick.
- Spread the filling mixture evenly over the dough.
- Roll the dough tightly from the long side and slice into 8 equal pieces.
- Place the rolls on a greased baking sheet and let them rise for another 30 minutes.
Bake the Rolls
- Bake in the preheated oven for 20-25 minutes or until golden brown.
Prepare the Frosting
- In a mixing bowl, beat together cream cheese, powdered sugar, softened butter, and vanilla extract until smooth.
