  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup ricotta cheese drained
  • 1 cup butter softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange zest
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup mini chocolate chips
Frosting Ingredients
  • 1 cup mascarpone cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C) and grease the Bundt pan.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the ricotta cheese, eggs, vanilla extract, and orange zest, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the mini chocolate chips.
  6. Pour the batter into the prepared Bundt pan and smooth the top.
  7. Bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 15 minutes, then invert onto a cooling rack to cool completely.
Prepare the Frosting
  1. In a mixing bowl, combine the mascarpone cheese, powdered sugar, vanilla extract, and heavy cream.
  2. Beat until smooth and creamy.
  3. Once the cake is completely cooled, frost the top with the mascarpone frosting.
  4. Optionally, sprinkle additional mini chocolate chips on top for decoration.
