Method
Prepare the Cake
- Preheat the oven to 350°F (175°C) and grease the Bundt pan.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the ricotta cheese, eggs, vanilla extract, and orange zest, mixing until well combined.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the mini chocolate chips.
- Pour the batter into the prepared Bundt pan and smooth the top.
- Bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 15 minutes, then invert onto a cooling rack to cool completely.
Prepare the Frosting
- In a mixing bowl, combine the mascarpone cheese, powdered sugar, vanilla extract, and heavy cream.
- Beat until smooth and creamy.
- Once the cake is completely cooled, frost the top with the mascarpone frosting.
- Optionally, sprinkle additional mini chocolate chips on top for decoration.
