Method
Prepare the Batter
- Preheat the oven to 350°F (175°C). Grease and flour a Bundt pan.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the ricotta cheese, eggs, and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the mini chocolate chips.
Bake the Cake
- Pour the batter into the prepared Bundt pan and smooth the top.
- Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before inverting onto a cooling rack to cool completely.
Prepare the Topping
- In a mixing bowl, combine the mascarpone cheese and vanilla extract. Mix until smooth.
- Once the cake has cooled, spread the mascarpone mixture on top and garnish with chocolate chips.
- Dust with powdered sugar before serving.
