Ingredients

Eggs
  • 6 large eggs hard-boiled
Filling
  • 3 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon hot sauce optional
  • 2 tablespoons green onions chopped
Breading
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup breadcrumbs preferably panko
  • 1 teaspoon Cajun seasoning
Frying
  • 2 cups vegetable oil for frying

Method

Prepare the Eggs
  1. Peel the hard-boiled eggs and slice them in half lengthwise. Remove the yolks and place them in a mixing bowl.
  2. Mash the yolks with a fork and mix in mayonnaise, Dijon mustard, Cajun seasoning, hot sauce, and green onions until smooth.
  3. Spoon or pipe the yolk mixture back into the egg whites.
Bread the Eggs
  1. Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and Cajun seasoning.
  2. Dip each stuffed egg half first in flour, then in beaten eggs, and finally coat with breadcrumbs.
Fry the Eggs
  1. Heat vegetable oil in a frying pan over medium heat. Once hot, carefully add the breaded egg halves, frying in batches if necessary.
  2. Fry until golden brown, about 2-3 minutes per side. Use a slotted spoon to remove and drain on paper towels.
Serve
  1. Serve warm, garnished with additional green onions or Cajun seasoning if desired.
