Prepare the Eggs
- Peel the hard-boiled eggs and slice them in half lengthwise. Remove the yolks and place them in a mixing bowl.
- Mash the yolks with a fork and mix in mayonnaise, Dijon mustard, Cajun seasoning, hot sauce, and green onions until smooth.
- Spoon or pipe the yolk mixture back into the egg whites.
Bread the Eggs
- Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and Cajun seasoning.
- Dip each stuffed egg half first in flour, then in beaten eggs, and finally coat with breadcrumbs.
Fry the Eggs
- Heat vegetable oil in a frying pan over medium heat. Once hot, carefully add the breaded egg halves, frying in batches if necessary.
- Fry until golden brown, about 2-3 minutes per side. Use a slotted spoon to remove and drain on paper towels.
Serve
- Serve warm, garnished with additional green onions or Cajun seasoning if desired.
