Method
Prepare the Eggs
- Hard boil the eggs, then cool them in ice water. Once cooled, peel the eggs and slice them in half lengthwise.
Make the Filling
- Remove the yolks from the egg halves and place them in a mixing bowl. Add mayonnaise, Dijon mustard, Cajun seasoning, chopped pickles, green onions, salt, and pepper. Mash and mix until smooth.
Assemble the Eggs
- Spoon the yolk mixture back into the egg whites. Set aside.
Bread the Eggs
- Dredge each stuffed egg half in flour, dip in beaten eggs, and coat with breadcrumbs.
Fry the Eggs
- Heat vegetable oil in a frying pan over medium heat. Fry the breaded eggs until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
Serve
- Sprinkle with additional Cajun seasoning and chopped parsley before serving.
