Prepare the Eggs
- Peel the hard-boiled eggs and cut them in half lengthwise. Remove the yolks and place them in a mixing bowl.
- Mash the yolks with a fork and add mayonnaise, Dijon mustard, Cajun seasoning, pickled jalapeños, green onions, and salt. Mix until smooth.
- Spoon the yolk mixture back into the egg whites.
Bread the Eggs
- Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Cajun seasoning.
- Dip each stuffed egg half first in flour, then in the beaten eggs, and finally in the breadcrumb mixture, ensuring they are well-coated.
Fry the Eggs
- Heat vegetable oil in a frying pan over medium heat. Once hot, carefully add the breaded egg halves, frying in batches if necessary.
- Fry for about 2-3 minutes on each side or until golden brown and crispy.
- Remove the fried eggs with a slotted spoon and drain on paper towels.
Serve
- Serve warm, garnished with additional Cajun seasoning or chopped green onions if desired.
