Ingredients
  

Eggs
  • 6 large eggs hard-boiled
Filling
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Cajun seasoning
  • 1 tablespoon pickled jalapeños finely chopped
  • 1 tablespoon green onions finely chopped
  • 1 pinch salt
Breading
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup breadcrumbs preferably panko
  • 1 teaspoon Cajun seasoning
Frying
  • 2 cups vegetable oil for frying

Method
 

Prepare the Eggs
  1. Peel the hard-boiled eggs and cut them in half lengthwise. Remove the yolks and place them in a mixing bowl.
  2. Mash the yolks with a fork and add mayonnaise, Dijon mustard, Cajun seasoning, pickled jalapeños, green onions, and salt. Mix until smooth.
  3. Spoon the yolk mixture back into the egg whites.
Bread the Eggs
  1. Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Cajun seasoning.
  2. Dip each stuffed egg half first in flour, then in the beaten eggs, and finally in the breadcrumb mixture, ensuring they are well-coated.
Fry the Eggs
  1. Heat vegetable oil in a frying pan over medium heat. Once hot, carefully add the breaded egg halves, frying in batches if necessary.
  2. Fry for about 2-3 minutes on each side or until golden brown and crispy.
  3. Remove the fried eggs with a slotted spoon and drain on paper towels.
Serve
  1. Serve warm, garnished with additional Cajun seasoning or chopped green onions if desired.
