Ingredients

Eggs
  • 6 large eggs hard-boiled
Filling
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Cajun seasoning
  • 1 tablespoon pickles finely chopped
  • 1 tablespoon green onions finely chopped
  • 1 pinch salt
  • 1 pinch black pepper
Breading
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup breadcrumbs preferably panko
  • 1 cup oil for frying

Method

Prepare the Eggs
  1. Peel the hard-boiled eggs and cut them in half lengthwise. Remove the yolks and place them in a mixing bowl.
  2. Mash the yolks with a fork and add mayonnaise, Dijon mustard, Cajun seasoning, pickles, green onions, salt, and pepper. Mix until smooth.
  3. Spoon or pipe the yolk mixture back into the egg white halves.
Bread the Eggs
  1. Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
  2. Dip each filled egg half first in flour, then in beaten eggs, and finally coat with breadcrumbs.
Fry the Eggs
  1. Heat oil in a frying pan over medium heat. Once hot, carefully add the breaded egg halves, frying in batches if necessary.
  2. Fry for about 2-3 minutes on each side or until golden brown. Use a slotted spoon to remove and drain on paper towels.
Serve
  1. Arrange the fried deviled eggs on a serving platter and serve warm. Optionally, sprinkle with extra Cajun seasoning for garnish.
