Prepare the Eggs
- Peel the hard-boiled eggs and cut them in half lengthwise. Remove the yolks and place them in a mixing bowl.
- Mash the yolks with a fork and add mayonnaise, Dijon mustard, Cajun seasoning, pickles, green onions, salt, and pepper. Mix until smooth.
- Spoon or pipe the yolk mixture back into the egg white halves.
Bread the Eggs
- Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
- Dip each filled egg half first in flour, then in beaten eggs, and finally coat with breadcrumbs.
Fry the Eggs
- Heat oil in a frying pan over medium heat. Once hot, carefully add the breaded egg halves, frying in batches if necessary.
- Fry for about 2-3 minutes on each side or until golden brown. Use a slotted spoon to remove and drain on paper towels.
Serve
- Arrange the fried deviled eggs on a serving platter and serve warm. Optionally, sprinkle with extra Cajun seasoning for garnish.
