Butter Beans
  • 2 cups butter beans cooked or canned
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup vegetable broth or water
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon paprika for flavor
  • 1 tablespoon fresh parsley chopped, for garnish

Method
 

Cooking the Butter Beans
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and sauté for another minute until fragrant.
  3. Stir in the butter beans, vegetable broth, salt, black pepper, and paprika. Bring to a simmer.
  4. Cover and cook for about 20 minutes, stirring occasionally, until the beans are heated through and flavors meld.
  5. Remove from heat and garnish with fresh parsley before serving.
