Cooking the Butter Beans
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the butter beans, vegetable broth, salt, black pepper, and paprika. Bring to a simmer.
- Cover and cook for about 20 minutes, stirring occasionally, until the beans are heated through and flavors meld.
- Remove from heat and garnish with fresh parsley before serving.
