Prepare the Cookie Dough
- Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Assemble and Bake
- Scoop out a tablespoon of dough and flatten it slightly. Place a teaspoon of caramel sauce in the center and cover with another tablespoon of dough, sealing the edges.
- Place the filled cookies on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
