Ingredients
  

Cookie Base
  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
Caramel Filling
  • 0.5 cup caramel sauce store-bought or homemade

Method
 

Prepare the Cookie Dough
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, baking soda, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Assemble and Bake
  1. Scoop out a tablespoon of dough and flatten it slightly. Place a teaspoon of caramel sauce in the center and cover with another tablespoon of dough, sealing the edges.
  2. Place the filled cookies on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  3. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  4. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes
