Ingredients
  

Eggs
  • 6 large Eggs Hard-boiled
Filling
  • 3 tablespoons Mayonnaise Adjust to taste
  • 1 teaspoon Dijon Mustard For tanginess
  • 1 teaspoon White Vinegar For acidity
  • 1 pinch Salt To taste
  • 1 pinch Black Pepper Freshly ground
  • 1 tablespoon Chives Chopped, for garnish

Method
 

Prepare the Eggs
  1. Place the eggs in a pot and cover with cold water. Bring to a boil over medium heat.
  2. Once boiling, cover the pot, remove from heat, and let sit for 10 minutes.
  3. Transfer eggs to an ice bath to cool for 5 minutes, then peel the eggs.
Make the Filling
  1. Slice the peeled eggs in half lengthwise and remove the yolks.
  2. In a mixing bowl, mash the yolks with a fork and add mayonnaise, Dijon mustard, white vinegar, salt, and pepper. Mix until smooth.
  3. Transfer the yolk mixture to a piping bag and fill the egg whites evenly.
Garnish and Serve
  1. Sprinkle with chopped chives for garnish.
  2. Serve immediately or refrigerate until ready to serve.
