Prepare the Chicken
- Heat the vegetable oil in a large skillet over medium heat. Add the chicken pieces and cook until browned, about 5-7 minutes.
Make the Curry Sauce
- Add the minced garlic and grated ginger to the skillet, cooking for another minute until fragrant.
- Stir in the red curry paste, coconut milk, chicken broth, fish sauce, and brown sugar. Bring to a simmer.
Add Vegetables and Basil
- Add the sliced bell pepper, zucchini, and onion to the skillet. Cook for 10-15 minutes until the vegetables are tender.
- Stir in the chopped basil and cook for an additional 2 minutes.
Serve
- Serve the basil chicken in coconut curry sauce over rice or noodles, garnished with additional basil if desired.

This dish can be adjusted for spice level by adding more or less curry paste. Serve with jasmine rice for a complete meal.
