Method
Prepare the Pork
- Preheat the oven to 300°F (150°C).
- Season the pork shoulder with salt, pepper, thyme, and rosemary.
- In a Dutch oven, heat olive oil over medium-high heat. Sear the pork on all sides until browned, about 8-10 minutes.
Sauté the Vegetables
- Remove the pork from the pot and set aside. Add onion, garlic, carrots, and celery to the pot. Sauté until softened, about 5 minutes.
Add Liquids and Braise
- Pour in the apple cider, chicken broth, and apple cider vinegar. Stir to combine.
- Return the pork to the pot, cover, and transfer to the preheated oven.
- Braise for 2.5 to 3 hours, or until the pork is fork-tender.
Serve
- Remove the pork from the oven and let it rest for 10 minutes before slicing.
- Serve with the braising liquid and vegetables.
