Ingredients
  

Pork Shoulder
  • 3 pounds pork shoulder bone-in, trimmed
Vegetables
  • 1 tablespoon olive oil for searing
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 medium carrots sliced
  • 2 stalks celery sliced
Liquids
  • 2 cups apple cider fresh
  • 1 cup chicken broth low sodium
  • 1 tablespoon apple cider vinegar
Seasonings
  • 2 teaspoons salt to taste
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon thyme dried
  • 1 teaspoon rosemary dried

Method
 

Prepare the Pork
  1. Preheat the oven to 300°F (150°C).
  2. Season the pork shoulder with salt, pepper, thyme, and rosemary.
  3. In a Dutch oven, heat olive oil over medium-high heat. Sear the pork on all sides until browned, about 8-10 minutes.
Sauté the Vegetables
  1. Remove the pork from the pot and set aside. Add onion, garlic, carrots, and celery to the pot. Sauté until softened, about 5 minutes.
Add Liquids and Braise
  1. Pour in the apple cider, chicken broth, and apple cider vinegar. Stir to combine.
  2. Return the pork to the pot, cover, and transfer to the preheated oven.
  3. Braise for 2.5 to 3 hours, or until the pork is fork-tender.
Serve
  1. Remove the pork from the oven and let it rest for 10 minutes before slicing.
  2. Serve with the braising liquid and vegetables.
