Method
Cook the Pasta
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
- Reserve 1 cup of pasta water, then drain the pasta in a colander.
Make the Sauce
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Reduce heat to low and add the softened cream cheese. Stir until melted and smooth.
- Gradually add the reserved pasta water, stirring until the sauce reaches your desired consistency.
- Season with salt and black pepper to taste.
Combine and Serve
- Add the drained pasta to the sauce and toss to coat evenly.
- Serve immediately, garnished with chopped parsley.
