Method
Cook Pasta
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
- Reserve 1 cup of pasta water, then drain the pasta in a colander.
Prepare Sauce
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Reduce heat to low, then add the softened cream cheese and reserved pasta water. Stir until the cream cheese is melted and the sauce is smooth.
- Season with salt and black pepper to taste.
Combine and Serve
- Add the drained pasta to the skillet and toss to coat in the sauce. If the sauce is too thick, add more pasta water as needed.
- Serve immediately, garnished with chopped parsley.
